  • 1 tablespoon (15ml) rum
  • 1/4 – 1/2 cup granulated sugar (see notes)
  • ½ teaspoon (1.3g) cinnamon spice

Directions:

  1. Preheat the oven to 350°F (177°C). Spray a 9×13-inch cake pan with baking spray or grease it with butter and flour. Set aside.
  2. In a large bowl, sift together the flour, baking powder, and salt. Set it aside.
  3. Break the eggs and separate the egg whites from the yolks. Place the yolks in a medium bowl and the egg whites in another bowl.
  4. Using a hand mixer, whisk the egg yolks and granulated sugar together until the mixture turns pale yellow.
  5. Add the milk and vanilla extract to the egg yolk mixture. Slowly pour this mixture into the flour mixture and stir until combined.

  8. Pour the cake batter into the greased pan and bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  9. In a medium bowl or pouring jar, combine the evaporated milk, coconut milk, and sweetened condensed milk.
  10. Using a wooden skewer, pierce the cake all over and slowly pour the milk mixture over the surface, making sure to cover the edges well.
