how to make Black Forest Brownies

Ingredients:

  • 3 cups fresh or frozen cherries (If using frozen, don’t thaw)
  • 3 tbsp kirsch
  • 1/2 cup granulated sugar
  • 1/2 tsp almond extract
  • 1 and 1/2 tbsp cornstarch
  • 3 tbsp water
  • 3/4 cup salted butter, melted
  • 2 ounces semi-sweet chocolate, chopped
  • 2 ounces milk chocolate, chopped
  • 1 and 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 4 large eggs
  • 1 and 1/2 tsp vanilla extract
  • 1 cup all-purpose flour (130 grams)
  • 2/3 cup cocoa powder
  • 1/2 tsp salt
  • 1/8 tsp espresso powder (See note)
  • 4 to 6 ounces chocolate chunks (optional)
  • extra cherry sauce, whipped cream or ice cream

Directions:

Make the Cherry Sauce:

  1. Stir together the water and cornstarch in a small bowl until the starch is fully dissolved.
  2. In a medium pot, add this mixture with the rest of the cherry sauce ingredients.
  3. Bring the mixture to a simmer over medium-high heat, stirring all the time for about 3 minutes.
  4. Once it simmers, lower the heat to medium-low and cook for 2 more minutes, still stirring. The sauce will thicken enough to hold when you drag your finger through it on the spoon.
  5. Take the pot off the heat and use a potato masher to break up the cherries. Then return to medium-low heat for about 1 minute more, stirring.
  6. Transfer to a bowl and chill in the fridge until cool.

Make the Brownies:

  1. Preheat your oven to 350° F. Spray a 9×9 square pan with nonstick cooking spray and line it with parchment paper.
  2. In a large microwave-safe bowl, melt the butter along with the semi-sweet and milk chocolates. Melt in 30-second intervals, stirring each time until smooth.
  3. Add the sugars and whisk together until just mixed.
  4. Mix in the eggs and vanilla, whisking until fully combined, then whisk for 2 more minutes.
  5. Fold in the flour, salt, cocoa powder, and espresso powder until no flour streaks remain. If using, add the chocolate chunks.
  6. Pour half of the brownie batter into your prepared pan. Drizzle 1/2 cup of the cooled cherry sauce on top and gently swirl it in with a butter knife.
  7. Add the remaining brownie batter and repeat with another 1/2 cup of cherry sauce.
  8. Bake for 50 to 60 minutes. A toothpick inserted into the center should come out with thick baked batter, not crumbs.

Serve + Store:

  1. Let the brownies cool for 30 minutes to an hour for cleaner cuts.
  2. Serve with whipped cream, cherry sauce, and a cherry on top.
  3. Store in an airtight container in the fridge for 6-8 days.
  4. Make-Ahead Tip: The brownies can be baked and stored covered at room temperature or in the fridge for up to 24 hours before serving.
